It’s been a while since my last blog post… :( Last week was pretty busy, and then I wanted to blog earlier this week, but was having issues with my blog platform and couldn’t work on the post for a while… It’s still a bit sketchy, but I’m hoping it doesn’t fall apart on me any time soon. And any spare time I have, I’ve been trying to catch up on sleep, although rather unsuccessfully. It’s been a challenge to keep my eyes open today. I think the bags under my eyes are becoming a permanent part of my face. But despite all that, every day at the cafe is fun and a pleasure. Now that I’m at the studio almost every day, I don’t get many opportunities to go out and try new veggie restaurants or explore Seoul. My world has gotten pretty small now, and as a result, so has the scope of this blog. But the plus side is that I get to meet people, try out more recipes, and learn how to run a business… so in that sense, maybe it’s about even. :)
There was also a photoshoot for Maison magazine. I’m having a few vegan cookie recipes printed in next month’s issue, so they came by to photograph the cookies, etc. It was fun having a whole camera crew squeezed into our little studio, all focused on some cookies. ha.
Oh, and then this happened. I was washing a glass and while my hand was inside it, the glass just randomly broke! I stabbed myself on the sharp edge and had to get stitches. It wasn’t that big of a cut… it was just a bit deep. No worries though~ I’m ok! And it doesn’t hurt at all. It’s just uncomfortable trying to work without trying to get it wet, or stretch the stitches. What’s awesome is that getting the stitches and fast treatment only cost a whopping $17. Yay for the Korean healthcare system.

The past week, I’ve been in a total chocolatey-mood… Hm, I swear I’m not PMSing or anything. Sorry if you guys have seen a lot of these photos already on my instgram feed. I haven’t been able to take as many photos as I’d like lately and I don’t have the time to edit them like I used to. :(
One of my closest friends here is Nigerian-American, and her mom was visiting Seoul recently~ Since they know I grew up in Ghana and miss West African food, my friend’s mom made some vegan red-red for me, using beans brought all the way from Nigeria. Sooo freaking good. It was deliciously spicy, just the way I like it. Thank you D and mom!
More cinnamon rolls, this time with strawberry preserves in the middle and strawberry glaze on top. I love making cinnamon rolls, but the recipe is a bit unreliable… sometimes it’s awesome, and other times, it tastes too yeasty or it’s just dry…. hopefully I can get more consistent results so this can be a regular item at PLANT.
Post workout snack. A Luna bar (from iHerb), and coconut water. Super refreshing and hydrating in the summer. It’s been really tough finding time to work out these days. I really miss my gym. :( Whenever I don’t work out for a while, I get super lethargic and low on energy… You would think that exercising would tire me out, but it’s totally the opposite. I’m trying to make it a priority because I know that without the stress-release that comes with working out, I’ll start going mad. hehe.
Made this for lunch at PLANT the other week~~ Lettuce, cucumbers, matchstick carrot and green apples, corn, cherry tomatoes, and smoky tempeh bac’n bits. I’m a little addicted to tempeh bacon these days…
And then this week for my lunch option at PLANT, I’ve been making these smoky TLT (tempeh bacon, lettuce, and tomato) wraps~ Love the smoky barbeque flavor of the tempeh, paired with the vegan aioli sauce. Yum! This will be served at PLANT for the rest of this week, if anyone is curious. :)
